Truffle
An irregularly shaped, often oval confection of ganache, coated with chocolate, and usually finished with a cocoa powder exterior. Truffles are made by heating a rich blend of butter, cream, chocolate, and often a flavouring, delicately shaping it, and enrobing it with chocolate couverture (milk, dark or white) Named after luxurious black truffles from the French Périgord region because of their visual resemblance, they may be either hand-rolled chocolate or domed with a piped centre.
