São Tomé

A prime growing area for the Amelonado subspecies of high quality Forastero, São Tomé is an island republic in the Gulf of Guinea off the west coast of Africa. The resulting cacao can be bitter with flavours of pure cocoa, cinnamon, sharp red fruits, and vanilla. It is a good base for blended chocolate.
