Palet d'Or
Literally, 'golden quoit'.
A term originally used to describe a French regional specialty, and now generally used to describe a pure ganache bonbon of dark chocolate. The original Palet d'Or was flat and irregular in shape and filled with coffee-flavoured ganache, with a fragment of gold leaf as decoration. It was created by confectioner Bernard Serardy in 1898 in the towns of Moulins. Today, chocolatiers also make Palets d'Or with chocolate ganache.
