Nougatine

Also known as Croquant.

A pliable paste similar to praline made of caramelised sugar mixed with ground almonds. Once this paste is made, it is put on a caramel roller and crushed into little pieces. Crushed nougatine pieces are used as filling in certain chocolates and chocolate bars.
