Blending

The process that occurs after roasting and before grinding of the cacao beans. The crushed beans are blended in a particular recipe, determining the flavour of the finished chocolate. Since even beans from the same region can vary in flavour from harvest to harvest (fruity, acidic, sweet, earthy, spicy, bitter, woody) the blending process, along with the flavouring process, produces a consistent 'house style.'
