Bittersweet Chocolate
Also known as Dark Chocolate.
The darkest of eating chocolate with the highest percentage of chocolate liquor and most intense cacao flavour. Bittersweet chocolate also contains extra cocoa butter to make it melt easily. It can also be used for baking, with many uses such as shiny chocolate garnishing curls and rich, dense chocolate cakes.
This sweetened dark chocolate contains at least 35% chocolate liquor; and at least 70% cacao content.
Not to be confused with unsweetened (bitter) or semisweet chocolate.
